“Jerk” gets put on a lot of menus. But real Jamaican jerk isn’t a flavor you add at the end — it’s a whole way of cooking that goes back centuries in Jamaica. Here’s what actually makes it real, and how we do it at Tru Jamaica.
It starts with the marinade
Real jerk begins long before the heat. The meat is marinated in a blend built around two non-negotiable ingredients: scotch bonnet peppers for heat, and pimento (allspice) for that warm, smoky-sweet backbone. Around those go scallion, thyme, garlic, ginger, and a handful of other seasonings every cook guards a little. The marinade needs time — this is not a quick job.
Then comes the fire
The word “jerk” refers to the cooking as much as the seasoning. Traditionally the meat is cooked slow over pimento wood, so the smoke becomes part of the flavor. That smoky char is the difference between jerk and “chicken with spicy sauce.” When you bite into real jerk, the flavor is in the meat, not sitting on top of it.
If the color and flavor wipe off, it was sauce. If it’s cooked into the meat, it’s jerk.
How spicy is it, really?
Scotch bonnet is genuinely hot, but real jerk is about flavor first, heat second. Ours is a medium spice — enough to know it’s there, not so much that it hides the seasoning. And if you want more fire, we keep real Jamaican hot sauce and our house Jerk BBQ sauce on hand.

- Jerk Chicken Entree — the classic, on coconut rice & peas with plantains.
- Jerk Breast — boneless, if you prefer white meat.
- Jerk Wings — great for sharing (or not).
- Rasta Pasta — penne in jerk sauce with peppers and spinach, and it’s vegan.
