The Story Behind Our Oxtails

Ask anyone what to order at Tru Jamaica and the answer comes fast: the oxtails. They’re our number one seller, and they’re also the dish that takes the most patience to get right. Here’s why they’re worth the wait.

Oxtail is a slow-food dish, always

Oxtail is a tough, richly marbled cut — and that’s exactly the point. You can’t rush it. It has to be seasoned deep and stewed low and slow for hours until the meat surrenders and slips right off the bone. What you get in return is a depth of flavor no fast cut can give you. When it’s done right, you barely need a knife.

The butter beans matter

Traditional Jamaican oxtail is stewed with butter beans, which go soft and creamy and soak up all that rich gravy. That gravy — thick, savory, deeply seasoned — is half the reason people fall in love with the dish. (It’s so good we sell it by the cup: ask for our 2 oz oxtail sauce on the side.)
